육수는 고등어, 가다랑어, 눈퉁멸, 전갱이, 다시마 등을 넣고
매일 끓인다고 하는데 자극적이지 않고 부드러웠어요.
면도 먹기 딱 좋은 두께와 식감이었구요.
성수동에서 소바야를 가신다면 여기를 꼭 추천드릴께요.
다음에는 온소바와 타누키를 먹어봐야겠어요:)
They apparently brew their dashi every morning
using chub mackerel, round herring, horse mackerel, bonito and kelp.
The dashi is easy on the stomach - you can tell that it's made with good stuff.
Also their in-house made soba noodle was also perfectly cooked.
If you want to try soba in Seongsu-dong we strongly recommend this place.
Next time we will try out their tanuki and hot soba :)
